Batch cooking
Batch cooking is preparing a large quantity of one dish at once, to be eaten in portions over several days, with the whole batch weighed and divided. IZeat records a portion of a batch from the batch's figures: the assistant works out a serving from the whole recipe's items and the number of portions, and the source of each figure is kept.
The honest way to record a batch is to record its ingredients once, weighed raw, and divide by the number of portions; the result is a per-portion figure with the sources of the ingredients behind it. A portion described later as "one of the chili boxes" is then a reference to that arithmetic, not a fresh estimate. Cooking fat is one of the ingredients, weighed like the others.
Batches are where estimates creep in: the pot is big, the fat is poured, and the portion is a ladle. Weighing the pot once removes most of the error for the whole week, which is why the assistant asks for the batch's ingredients and the number of portions rather than guessing a chili. The community's own advice is the same: description, weights and brands over any picture.
