Fat

Fat is the macronutrient that carries the most energy per gram, about 9 kcal, and that a body uses for energy, for storing it, and for building cells and hormones. IZeat records the grams of fat in every item with its source, sums them for the meal and the day, and asks about cooking fat before estimating a dish, because fat is where an estimate goes wrong by the most.

Fat's energy factor is more than twice that of protein or carbohydrate, so a tablespoon of oil changes a meal's calories more than any other single detail a customer might forget to mention. That is why the assistant is told to ask what a dish was cooked or dressed in when the words leave it open, and only then; a steamed vegetable gets no such question. Labels and tables give the grams; IZeat stores them as read.

Fat is the reason a plate photo cannot give an honest number: a photo shows the chicken, not the oil it was fried in, and the r/loseit test that measured this found errors of twenty to fifty percent from such invisible additions. IZeat's rule is questions before numbers. A customer who says "grilled, no oil" gets a reference-values figure; one who says "the restaurant's curry" gets an estimate marked as one.
